Formation of Furan and Alkylfurans

Furan and Alkylfurans – a group of toxins that are generated during the processing of some products, especially those that use heat such as sterilization, roasting, baking, etc.

At the beginning of 2004, the Food Administration The United States Food and Drug Administration (FDA) has detected furan in a wide range of food products, especially canned and processed foods. Accordingly, studies show that toxins are formed from reducing sugars, amino acids, ascorbic acid, unsaturated fatty acids and carotenoids in food through the Maiard chain reaction. Foods commonly found in furans and alkylfurans are coffee, canned baby food, biscuits, breakfast cereals, crunchy snacks, potato chips, etc.

Why control Furan and Alkylfurans?

In terms of toxicity, Furan and Alkylfurans are heterocyclic aromatic, colorless, flammable and volatile organic compounds. The International Agency for Research on Cancer (IARC) has classified furan as a possible carcinogen and is concerned about the possible health risks associated with the occurrence of furans and alkylfurans in foods.

In October 2017, the European Food Safety Authority (EFSA) published a Scientific Opinion on “Public health risks associated with the presence of furans and methylfurans in food”. However, because the database on the presence of alkylfurans groups in food is still insufficient, EFSA recommends providing additional data on the alkylfuran group in parallel with the Furan index in foods.

On 28 March, the European Commission published recommendation number 2022/495, on monitoring for the presence of furans and alkylfurans in food. EU member states need to step up the supervision of food production and business establishments in monitoring furan, 2-methylfuran and 3-methylfuran, 2,5-dimethylfuran in food. In addition, depending on the specific product, it is possible to control the addition of some other alkylfurans (such as 2-pentylfuran and 2-ethylfuran) in food.
